肝酱 Liver Paste

前两天上网读到宝宝断奶后铁质的摄取与吸收会受到影响, 因而需适当的补充铁质, 其中又数动物性食品的吸收率较高. 由此趁着昨天放假在家, 赶快给小佳佳作了辅食一道如下:
红枣6枚, 猪肝(或鸡肝) 50克, 西红柿半只, 油盐各少量. 红枣水泡(或蒸煮熟)后去皮去核, 枣肉弄碎; 西红柿热水烫过后去皮剁泥; 猪肝剁碎/搅碎, 去筋皮; 搅拌以上材料后, 加少量水, 并以适当油盐调味, 蒸熟即可. [妈妈做法是把上述材料一起蒸熟后再用搅拌机搅碎] ** 西红柿所含有的维他命C 将更好得促使铁质的吸收。配以红枣可以使口味丰富酸甜, 同时红枣也富含铁质
After baby's weaning, she would be susceptible to iron deficiency as breastmilk used to provide all that important and easy-to-absorbe nutrient. Hence it is advisable to supplement with iron rich food stuff for baby. Among which, meat based food like liver is a good choice due to its high absorbancy, especially when mixed with vitamin C. Here is a recipe mommy tried at home while on Hari Raya holiday:--
Red dates 6 pieces; liver (pork or chicken) 50g; tomato half; oil and salt to taste. Peel and core the red dates after coaking or boiling; peel tomato and finely chop; remove skin off the liver and chop finely; add salt and oil sparingly to taste. Combine all ingredient and steam, then blend to a fine paste. Can mix with porridge or cereal to serve. Rich in taste due to the addition of tomato and dates. The latter is rich in iron as well.
